Ingredients: streaky pork and crab meat (1,000g in all), sifted flour, weak flour and Canadian flour (1,000g in all), refined salt, gourmet powder, sugar, chives, ginger, Shaoxing wine, chicken broth, egg white
Recipe: Mince the streaky pork and mix it well with refined salt, gourmet powder, Shaoxing wine, sugar, chives and ginger shreds and chicken broth. Sauté crabmeat and stir it with the streaky pork to make a filling. Mix the three types of flour and water into dough. Knead until the dough is smooth and elastic. Cut into pieces and roll out the dough balls. Place the filling made above in each wrapper and pinch-gather the edges to seal the dumplings. Steam in a steamer over a strong fire till done. Remove and serve.
